Mortgage Lifters

Look what I found in the bottom of the freezer on Saturday! You can read the story of the Mortgage Lifters Tomato in THIS POST.


The vegetable beef soup made with this last bag of "frozen summer" was delicious.


Every batch of vegetable soup I make has different ingredients. This one had the following:

Mortgage Lifters tomatoes
Browned ground beef and chopped onions
2 cans of No Salt Added Veg All
Leftover garden peas from the night before
A few diced potatoes cooked in a separate pot and added to the crock pot
Black Pepper sprinkled in your mug of soup

Of course some salt would have added much flavor to the soup, but it was still good.  We try to cut out as much salt as we can.

You never know what you'll find in the bottom of your freezer or at the back of your pantry.  What a blessing it is to be able to make a delicious meal from what you have on hand.

What a sweet post ánd I do remember the first one.
Having a low cost cooked at home soup instead of expensive restaurant meals can help with mortgage lifting, right?

My tomatoes are "german johnsons" and I still have several bags in the freezer. They are so easy to put up and I told hubby that i want a LOT of tomato plants next year. Nothing like homegrown tomatoes in soup, chili, or any dish!!

How true that is, Debbie! I made
chili last week from some of this summer's tomatoes. Even had enough to share. Add corn bread and coleslaw and it is all YUMMY.

Hope Hubby is still improving - and behaving!!!

"I think I can smell your soup simmering. Mmmmm I feel successful as a cook when I can take items I have an make a meal. We did that with leftovers and extras last evening. We are both a bit over weight and very tired of evenings. Thinking of having raw carrots, sliced apples with a bit of peanut butter and some left over cheese from Thanksgiving for our evening meals this week. Thank you for the inspiration."

Tomatoes are my go to for cold days... We can make a meal with just "rice and tomatoes" flavored with bacon drippings... or just a can of whole kernel corn and a can of tomatoes flavored with bacond drippings and peanut butter sandwich...quick and delicious on a cold day. I also can go for a big pot of veg soup anytime. We had more tomatoes planted this year than usual, but didn't really have any to can or put in the freezer. Lots of friends and squirrels, chickens, and guineas to help eat...LOL
