I have not cooked egg plant at all. But I would follow the advice here and dip in egg and then flour or cornmeal and fry. Frying helps almost anything. :)
I cooked some the other day and researched a little online before I did. ( I have cooked it in the past and it was bitter) So, this time, I peeled it, sliced it, sprinkled with salt and let it sit, like we do our cucumbers. Then I dipped in flour and fried them. I ate some fried with nothing on it and then covered a few with spaghetti sauce and parmesan cheese. YUMMY!

I fry mine like I do squash. Dip in egg then in flour and fry.
It is really good this way.

Anything I don't know how to cook, I batter and fry (like fried green tomatoes)... that's the only way I have ever served egg plant.
