Another Simple Country Meal


I've been doing menu planning by the seat of my pants this week! In other words, at the last minute. So far this week we've had the following meals:

Sunday: BBQ country style ribs, Au Gratin Potatoes, corn on the cob

Monday: Chicken Salad, rice cooked in broth

Tuesday: Sloppy Joes and Pinto Beans

We ate the Sloppy Joes in an open face sandwich style using plain bread. Of course these had to be eaten with a fork. :o)

Here's how I made them: I browned a pound of ground beef with a chopped green pepper and onion, and drained it. Then I added about a cup of ketchup, 2 tablespoons brown sugar, 2 tablespoons maple syrup, 1 tablespoon mustard, half a cup of bbq sauce, and salt and pepper to taste. I let this simmer for a few minutes.

The pinto bean side dish went great with the Sloppy Joes

For supper tonight? I don't know!! What are you having? I need some inspiration!

Those sloppy joes and beans look delicious. It's been so hot that we've been having simple meals for both dinner and supper. Tonight it's going to be cornbread, butter beans and fried taters. I can only go so long without good old country eats.

Do you make enough of the sloppy joe mixture to freeze portions? That would make a quick meal when you don't have time to cook. By the way, we always eat our sloppy joes the open face way. We don't like to eat too much bread.

Oh, we did a "seat of my pants" meal last night. Tyson's chicken nuggets, leftover corn on the cob, and Uncle Ben's rice and broccoli. It was actually very good. :o)

We're having sloppy joes tonight as a matter of fact. Guess that probably doesn't help you out at all, considering you just had them.:-) We're also having corn on the cob and coleslaw. Yum!

I love a simple meal and we love open-faced sandwiches around here too!

Okay, I'm really hungry after reading all these ideas, lol. Tonight we are having a light meal - baked chicken wings and marinated cucumbers and onions. Yesterday it was turkey burgers/cukes & onions, and the day before that sandwiches made with homemade tortillas and homemade pickles.

That looks really good, Debbie. Sometimes I think the seat-of-your-pants meals can be some of the best!

I just may add your recipe to my list for next week. Could you share how you do your beans? I could use some southern inspiration. :)
